This recipe came from a whim to make Swedish meatballs. I started searching online to see if I could find one to match the IKEA recipe. Then I started thinking that maybe there might be a recipe for a Swedish meatball casserole. It didn’t take long to find this recipe.   So that is where I started.  

This recipe will FiLL a LARGE oval crock-pot with a little left over for a separate dish.  The original recipe serves 8, and I doubled everything.  So plan on at least 16 servings.  

I baked a family sized bag of frozen home style meatballs, from Walmart, according to the directions. (usually on the bottom shelf in the freezer section.) Then I cut them all in half.

I cooked two 1 pound boxes of medium shells right at about 7 minutes until they were just almost done. Then drained them and set them aside with the meatballs.

Then I doubled all the gravy ingredients on the recipe.

Here are the doubled gravy ingredients:

  • 12 Tbsp. butter (3/4 cup)
  • 14 Tbsp. all-purpose flour (3/4 cup + 2 Tbsp.)
  • 2 Tbsp. Worcestershire sauce
  • 9 cups beef broth
  • 6 Tbsp. parsley
  • 1 cup heavy cream
  • (I did not use salt because I used bouillon to make the broth.)
  • 1 tsp. black pepper
  • 4 cups shredded Parmesan cheese

Directions:

  1. Melt the butter over medium heat.
  2. Add the flour. Continue to whisk for 2 minutes.
  3. Add the Worcestershire Sauce
  4. Add the beef broth 1-2 cups at a time until all incorporated.
  5. Bring the liquid back up to a simmer whisking frequently.
  6. Add the parsley, the heavy cream, pepper, and cheese.
  7. Continue whisking until the liquid begins to slightly thicken.
  8. Place noodles and meatballs into crock-pot or baking dish.
  9. Pour gravy over top of the noodles/meatballs.
  10. Cook in crock-pot on low for 1 hour or in the oven on 375 for 30 minutes until hot and bubbly.

*After reading many recipes for Swedish meatballs, I noticed that some included cheese. Parmesan was the most common one added. Cheese always makes things better. I felt it would be a good addition. The only criticism from my family was that some of them thought it could use MORE cheese, but they are the type that would never say stop at Olive Garden when they are adding cheese to the salad.
