Where each day is an adventure, life is NEVER boring, and we find JOY in the little things.

I love getting flash food boxes of fruit or veggies from giant. They are usually filled with overstock or near best buy dates and are $5.

The most recent box had 2 zucchini, 2 yellow squash, 1 eggplant, and lots of tomatoes.

Right away I thought ratatouille.

I made a quick version. For the sauce, I used Prego. I put a thin layer of sauce on the bottom. Then I sliced everything up. I arranged it in 3 rows.

Then I poured the rest of the sauce on top.

I baked on 350 degrees, covered, for 1 hour.

I placed some bread crumbs on top ams a little Mexican cheese (just because that is what we had in the house). Then back to the oven for another 5 minutes to melt the chesse.

Notes: I did not get anymore pictures, due to it being time to eat. I do think I used a little too much sauce.

Everyone liked it. Plus they were happy to finally be trying Ratatouille.

Mine was not as pretty as the rat’s in the movie, but it was very good.

I also had a plate full of scraps and leftovers for the chickens!
