I am not really a cereal person. To me, cereal is more like a treat to eat later in the day. For breakfast, I like something a little more substantial. Sometimes it is leftovers from the night before. Occasionally, I will eat a bowl of steel cut oats. I really prefer a breakfast sandwich. My favorite is ham, egg, and cheese on a croissant with a ranch type sauce. I like any type of bread from bagels, and English muffins to just toast. The inner verities are numerous. Even your sauce can be creative from butter to ranch or any other thing you can imagine.
I like to make the breakfast sandwiches in bulk. (When I don’t have any made, I buy the Walmart brand of croissants with ham, egg, and cheese.) Here is how I make them.
I try to make 24 at a time.
First crack 24 eggs into a bowl and whisk them like you would for scrambled eggs. I have found that scrambled works best for freezing.
Spray a half sheetcake pan with cooking oil spray. Pour in the eggs, and bake at 350 for 20 minutes. Don’t worry if it bubbles up. When you take it out, it will settle down. Once they settle, cut them into 24 equal squares. (See Photo)
While you are waiting for the eggs, you can cut the English muffins in half and toast them. (Same if you are using bagels. I would not toast the croissants.) Once they are toasted, you can add whatever sauce you want to one or both sides of the muffin. We leave ours plain, because some of the children prefer plain. You can always add sauce later once heated.
Now, put whatever meat you have chosen. Bacon is my least favorite, because it just doesn’t hold the crispiness in the freezer. The sausage is just precooked packaged sausages that you can get at Aldi or Walmart. Ham is lunch meat ham.
Next, add the cheese on top of the meat. (My family greatly prefers Land O Lakes white American cheese from the deli.) You could use whatever cheese you like best. I have used Colby jack, cheddar, provolone, swiss and mozzarella when they were the only cheese in the house.
Next. add the egg squares on top of the cheese.
Then put the tops on the muffins.
I like to wrap each muffin individually so that they can be heated one at a time in the microwave. They are wrapped in wax paper, but parchment or freezer paper would work also.
After they are wrapped, I store them in gallon bags in the freezer. I don’t know how long they will last because they go quickly around here. When you want to heat one up, you just put it in the microwave, still wrapped in the wax paper, and heat for 1.5 – 2 minutes or until heated throughout. If you use different breads, it will take different times.
So, here is the basic recipe…
- choose a type of bread…Bagel, English Muffin, Croissant or any other
- choose a sauce
- choose a meat…bacon, ham, sausage
- choose a cheese
- add egg…scrambles for freezer, or any type of egg if you are making just one.
- Do you want to add anything else? Make them how you would like them.
- add the top
- wrap the sandwich if freezing.
- place in gallon bag if freezing.
- cook 1.5 -2 minutes to heat throughout.
You can think of many possibilities. We have used tortilla shells and wrapped it up like a breakfast burrito, with additional ingredients. You could use pita bread. Think and be creative. Use what you have in your house.
